Dinner in Rome on Easter Sunday and Monday: reservations necessary?

We'll be arriving from Florence on the evening of Easter Sunday. Should we make reservations for Easter night and Monday, or are we OK "playing it by ear"?

There may be a difference of opinion on this and I think it may be more of a cultural things. Over the years we learned from experience that it is best to make reservations at any time. It is not to insure a seat in a crowded restaurant but to show respect for the restaurant and its staff. We seem to get better service and tables when we make reservations. And sometimes that reservation may not be more than an hour or two before. We stopped by a restaurant on the way back to the hotel, make a reservation for an hour or two later, and then returned.
