I am finding restaurants are getting booked now for Christmas/Christmas Eve in Venice. Appreciate any and all recommendations.

Many places will be closed starting the afternoon of 12/24, then 12/25 and 12/26. Some of the nicer hotels will certainly be open. I'm surprised you are seeing places booked this early. Sorry I can't help with this one - I just know lots of towns pretty much close down those 3 days in December.
