To help you out a bit, what you are looking for has traditionally been called an Enoteca. Maybe one of the best known (to most on here) is the long Rick Steves recommended Enoteca Cul de Sac, near Piazza Navona. Excellent selection of wine, good cheese platters and other snacks, plus enough things for a meal.

We usually stay in the Trastevere, near our hotel is Enotecs la Vita Roma; much smaller, laid back, but still excellent selections.

You can probably find some close to your hotel with a search.

I like Antonini -- since it is near the courts building the legal sec'y crowd hangs out there.
