You might consider this one we stayed in May.
It is a lovely apartment. The Airbnb photos are accurate.

I would note in case helpful to you there are three flights of stairs inside the apartment building to the front door and no elevator. And the stairs up to the bedroom are quite steep too.
But we loved it for the view and the skylights.
It's on a quiet street, but very near the center of Ortygia. And there is a nice little grocery store right at the corner.

we've stayed in this Air BnB apartment twice, and just loved it!
there may be a minimum stay now, but you could always reach out to the owners and see if that's an issue. great location, lovely roof terrace:
