Since we will be in villages, will restaurant reservations be hard to get? Should I rely on the Fork app? or take my chances? Your experiences will be very helpful. I know in the past many of the hotels had restaurants so eating on site was easy. This will be my first trip abroad since Covid so not sure if this has changed. Thanks.

We have found since Covid that we need to make reservations more often. When we did this tour in 2017 (I think) the only town in which we made a reservation was Levanto. But on our trip to Italy last year, we found more places wanted reservations, and were turning people away who didn't have them.
Visited Venice, Florence, San G and base locations, with other small towns in Tuscany, in early April. We had dinner reservations every night, made daily by the concierge on his recommendation. Other than 1 restaurant in San G, we saw multiple people turned away (7:00 - 8:00) in each of the other places. Yes, a couple of folks talked with the owner and returned later as we were leaving and were able to get seated late. Not sure when you are traveling, but if it is during the summer, I would recommend you coordinate reservations first thing when you arrive in each town. Better to be sure than sorry.
