My first thought is that 4 adults plus luggage will require a very large vehicle which might be a challenge for a 1st time driver trying to negotiate some of the narrow rural roads. Add 4 sets of golf clubs and you pretty much require 2 vehicles in order to fit everything, so if you can get away with renting clubs locally that would simplify things a bit.
The drive to Carah Bridge is about 2.5 hrs. The location is pretty central for exploring Dingle, Killarney NP and the ROK so you might be about to unpack once for a few days and be done with it.
Dingle town gets pretty mellow in the evenings after the last tour bus departs around 4:30 PM. Since Irish drink-driving laws are pretty strict you'd be well advised to find a place within walking/stumbling distance of the pubs if you're up for a pint or two. That, or have a designated driver.
Crossing the Shannon via the Tarbert ferry and then up the coast is a pretty way to go if you have the time.

I think your itinerary is well paced for a fairly quick trip. Definitely think carefully about the car you rent. You will have to pack really light because you don’t want to drive a large car on those narrow roads. That should not be difficult for an eight day trip. Hope you have a great trip!

Make sure to check out your car rental insurance - big car, small roads. In past trip, knocked passenger side rear view mirror back three times and slit a tire. My car insurance is not valid in Ireland. Paying more next month for insurance than rental.

Day 2 - Don't miss the Cliffs of Kerry They are worth the entry fee.

Day 5 - Rather than driving via Linewrick to Cliffs of Moher, use the Tarbert to Kilimer Ferry instead. It is a shorter distance although may not be any quicker, but is a is a much more interesting drive. If time allows, take the R477 from Doolin which takes you round the coast to Ballyvaughan, to pick up the N67 to Galway.
