I was happy with the Holiday Inn Express Dublin City Center on my three night stay in April. The price was reasonable and the service at the hotel was excellent.

If it's your intention is to see some of the city before your departure then anything within walking distance of the Trinity College/Temple Bar area (South of the Liffey) would be ideal.

We stayed at Baggot's Court Townhouse B&B. It's near St. Stephen's Green etc. It was fine, nothing fancy but decent breakfast, clean, not too expensive.

Is that one night the night before your departure? If so, what time is your flight and are you returning directly to the US? If you are going non-stop to the US you preclear US immigration at the Dublin airport. It is recommended that you allow 3 hours for that. So if you have an early flight you might want to stay at one of the airport hotels or in one of the nearby towns like Malahide. If it's a late afternoon flight and you want to see Dublin then stay in the City Center near St. Stephen's Green/Trinity College. I'm fond of The Wilder which is south of St. Stephen's but still within walking distance to it. https://www.thewilder.ie/en/usa-visitors-welcome/

We stayed one night twice last trip. EasyHotel and Point A. Both modern, economical and very small rooms. Point A included breakfast.
