Having decided to save Belfast for another trip where should we spend an extra day?
traveling in May, 4 adults
Land in Dublin and bus directly to Galway - 1 night
fly to Inishmore - 1 night
ferry to Cliffs of Moher and Doolin -1 night
Pick up car, drive to Dingle - 3 nights
drive to Kinsale - 1 night
drive to Kilkenny - 1 night
drop off car, Dublin - 3 nights
Options we considered are a night in Trim before dropping off the car
add a night to Kenmare and see the ROK
or should we add another night to one of our 1 night stays?

I don't think there's a car hire near Doolin. I've often thought of taking a ferry from Galway to Kilronan to Doolin and am always thwarted by the lack of car hire (and if there were, the one-way fee).
Your alternative is to take a ferry back to Galway, pick up a car, then drive to Doolin in time for the 5pm-ish boat trip to Moher.
Or go directly from DUB to Galway for flight to Inishmore (if possible) and do Galway second. Depends on when your flight arrives.
The plan was to rent the car at the Shannon airport, I know its an hour away and not sure how we will get there but I figured there must be a good way to get to the airport - maybe not?
I had not considered going straight to Inishmore, my concern would be that somehow the flight to Dublin is delayed and throws off the whole plan. Arrive in Dublin at 9am so maybe it could work.
One night stops effectively mean less than a day in a place which doesn’t give much time to see them. Rather than add another one nighter in Kenmare, think about adding an extra night to somewhere else. ROK can be done from Dingle.
By the time you drive to both Kinsale and Kilkenny and only spend one night each, you may be short on time. I think I would add the extra night to Kilkenny. That way you can spend much of a day in Kinsale (or stops along the way), then have a full day for Kilkenny.
Second choice (just for me) would be to add a night to Galway. You’ll probably arrive a bit jet lagged. Having a day to wander Galway before catching a morning flight might be nice.
I agree with TexasTravelMom; spend the extra day in either Kinsale or Kilkenny. Assuming that you are driving the Dingle Peninsula and the ROK, an extra day/night in either Kinsale or Kilkenny will give you a break from non-stop driving. Either town is worth a two-night stay to enjoy and recharge.
