What to do in the Ennis area

Looking for recommendations of places to visit near Ennis. We are arriving 2 days prior to the BOI Tour and plan to spend the first day enjoying Ennis and recovering from jet lag. The next day is open for whatever we want to do. Thinking about taking the bus to Bunratty Castle and spending the day there. Open for other suggestions.

We took the bus to Galway for the day. I'm glad we went, but I know in the past at least one couple did the falconry school at Ashford Castle and raved about it. I think you've either got to rent a car to do this or hire a driver. We were going to go to Bunratty Castle, but the weather didn't cooperate. We ended up walking around Ennis, doing some shopping,etc. If you go out of The Old Ground Hotel (walk out through the Poet's Corner Pub), turn right and go down about a block, there is the Dunnes Supermarket. In Ireland, you have to bring your own shopping bags, but one of my best souvenirs is my Dunnes Stores shopping bag that I think was about 1€. Also, we really enjoyed the Poet's Corner- out of our 3 nights we ate there twice. It's a good sign when many of the patrons are locals and regulars.

Thank you for the information. My daughter would like to go to Galway but I thought it was a bit too far for a day trip because we would need to take a bus. In retrospect do you think it was? What did you do in Galway that you could recommend? I really appreciate your dining suggestion for Ennis as that was my next question.
