On my previous trips to Ireland, I haven't given much thought to the added-on VAT at lodgings. This time I've been looking a little more closely and find VAT amounts from $32.00 to $65.00. So, my question is this: is there a way to get the VAT amount back like we do on purchases?
No. VAT refunds are for goods you are taking out of the country. There is no refund on lodging tax.

The VAT refund is for items (goods) that you take out of the country unused. No refund if it is a service that you have used and no refund if it is goods which have been used.
VAT may be quoted for business use but for consumer use it should all be wrapped up and included in the list price which you pay. Unlike in North America there is not a price and then all the add ons - in Europe what you see is what you pay.
