Would definitely spend two nights in Dingle. So many pubs and restaurants. Doolin is really just a row of maybe five or so pubs next to each other. Parking in Doolin is bad also.

Agreed, Dingle is by far the best little village in Ireland. Ive never met anyone who didn't love it.
Enjoy the magic once you get there. If you have any questions just pop me a message.

OK, so two nights in Dingle it is. Now the question is whether we can comfortably leave Dingle early morning, visit the Cliffs of Mohr and still get to Galway by 4-5pm.

Thoughts ?

Of course you can. It's a relatively short and scenic drive from Dingle to the cliffs and then on to Galway.
To mix it up a bit and save yourself a little extra time on the road you could take the ferry across the Shannon from Tarbert, which leaves every hour on the half hour. http://www.shannonferries.com/page/ferry-timetable/7. We found it a much more pleasant way to go than driving all the way around via Limerick, plus you can pick up the N67 on the other side which will take you thru the picturesque little villages of Kilrush and Kilkee on your way north.

We left Dingle at 9 or so, stopped at Bunratty for a few hours, then the Cliffs and pulled into Galway around 7:15

Sounds good everyone, thanks. We are getting closer to finalizing our itinerary

Day 1 - Arrive in Cork, head to Cobh, staying two nights. Thats our base for stops in Cobh, Cork and Middleton days 1 and 2
Day2 - Cobh

Day 3 - Leave Cobh for Kinsale, spend the day and stay the night

Day 4 - Leave for Killarney, visit Muckross, Torc, Ross etc then head down N71 to Kenmare where we will spend the night.

Day 5 - This is a question mark, do we spend an entire day, then a second night in Kenmare, is there enough to do ? Or do we spend the day completing the ROK and end up in Dingle ? If we do the latter then we end up with an extra night which we could of used in Kinsale ? Or are we shortchanging the time in Killarney/Kenmare

Day 7 - Arrive in Dingle after the ROK . Stay two nights as everyone suggests
Day 8 - Dingle

Day 9 - Head the the Cliffs of Mohr on our way to Galway, spend the nigh
Day 10 - Galway
Day 11 - Head from Galway to the Shannon Airport

For your day 5 consideration:
There's a spur off the ROK called the Skellig Ring Road that's quite nice...weather permitting. It's sort of the ROK in miniature but without the crowds. As of the summer of '14 the tour buses didn't go out there, so you can meander around the ruins of an old abbey and an old castle at your leisure. Plus, there are picture postcard views of the Skelligs from a couple of view points along the Kerry Cliffs. The Skellig Center at Port Magee is nice too and, depending on your interest (and the weather), you could take a boat tour out to the islands. Believe there's a place near Ballinskelligs where you can do that too.
Another possible side trip off the ROK is the Gap of Dunloe - one of the prettiest little glens in Ireland. Can walk part or all of the road (3.5 miles each way to the head of the glen) or take one of the jaunting cars which are great fun. Kate Kearney's Cottage is a good place for lunch there.

The Beara Ring is in that general area as well, and is also worth seeing and much less traveled than the ROK. Some of the roads are a little (okay, more than a little) narrow, but I thoroughly enjoyed my day in that area traveling between Kinsale and Kenmare. On a whim, I stopped in Glengariff and took a boat to Garnish island, which has an interesting microclimate and has beautiful gardens.
