I have two days in April to visit the West Coast of Ireland, likely staying in or near Galway. I love the outdoors and will be visiting The Cliffs of Moher. Any other suggestions to maximize the two days?
If the weather allows, whether you’re staying in Galway itself, or in Salthill just to the west, walk the Salthill promenade, 30 minutes, one way. Locals kick the wall before they turn around.
Will you have your own car? Toby Kirby does a great guided tour of the unique Burren, some distance to the south, but near the Cliffs of Moher. Or, some distance northwest, but kind-of in the neighborhood of Galway, the falconry at Ashford Castle does a Hawk Walk, where you fly your own Harris Hawk, with an expert guide. The extended version Walk includes time with their big owl, too.
Find a pub with live Trad Irish music.
Inish Mor, largest of the three Aran Islands, is beautiful and could easily fill more days than you have. It's an easy, cheap, quick 10-minute hop (flight) from an airstrip near Galway. It was a highlight of our trip.
The only potential issue with your plan...weather. If all you have is two days, hope that you get lucky and those two days are clear and fair, rather than stormy.

Visit the town of Ennis. It is in County Clare south of Galway. A real lovely medieval high street.

Galway was my least favorite place in Ireland. Travel just a little bit further to the Aran Islands and stay there. You will be glad you did.
