I looked up trains from Killarney to Cork and I keep seeing a message that says if a train is intercity it is completely booked. Yes this is an intercity train and I can't pull up a fare for any of the times I would consider to travel. Anyone else run into this or can tell me how to get around this? We will be traveling the last week in May.

It's unlikely to be fully booked, most probably you're too early to buy advance tickets. The website is poor at explaining this. Try again in a week or two.
