One suggestion would be the pretty little town of Adare - lots of thatched roofs, quaint shops, and generally a nice place for lunch or a stroll.
It's a popular stop for bus tours however, which can fill the place up pretty quickly if you're unlucky with your timing, though they typically don't stay long.

We're going the other direction and stopping at the Rock of Dunamuse (1/3 point) then lunch at the Pantry Cafe (mid-point).
