sights between rock of cashel and dingle?

My husband I will be in Ireland for a week in August. Our tentative plan is to spend a day and a half in Dublin (including Bru na Boine), a day seeing the Rock of Cashel and Cahir Castle (overnighting in Cashel or somewhere nearby), then driving to Dingle and spending the remainder of our time in the Dingle Peninsula area. We will fly out of Shannon airport. The drive from Cashel to Dingle appears to be about three hours -- does that seem right? Are there sights along the way we ought to see?

Also: are the Blasket Islands recommended? Any other recommendations for the Peninsula?

I wanted to see the Cliffs of Moher but that simply does not seem possible without more time.

To address your question re recommendations for the Dingle Peninsula: as you explore this gorgeous area, the Blasket Centre, located on the tip of the peninsula, is a very worthwhile and don't-miss-museum.

Great Blasket Island is my favorite place in Ireland, and quite possibly my favorite place in Europe. It is just magical. It's a wonderful place to hike around on your own, though you have to be willing to climb hills. It's breathtakingly beautiful, and the ruins of the stone cottages, which haven't been occupied since the early 1950's, are quite moving. If you go, make sure to read some of the books written by the islanders from the early 20th century. It will add so much meaning to your visit. The museum on the Dingle peninsula is worthwhile as well. The Dingle loop is beautiful, with fabulous scenery and lots of old ruins to explore, and Dingle town is a fun place to spend some time.
