Any suggestion for sheepdog demonstrations in the Killarney or Dingle areas? We prefer not to be part of a large, bus group demo.

Kinsane Sheep Farm, just south of Killarney and the National Park. We visited 2 weeks ago. Will you have a car? It's a nice drive. (Well, by Irish standards...there will be buses and probably random sheep on the narrow road. I recall it being 30-40 minutes from Muckross House.) The farm is an eyeful, and the demonstration entertaining and educational. Absent a car, I'm guessing a bus tour out of Killarney can be arranged. Forum experts will probably offer specific advice on that issue.
