I will be arriving in Shannon airport 1:00am, any suggestions for places to stay that are easy and safe to get to.

There's a Park Inn by Raddisson across the street from the terminal. It's a two minute walk.
Make sure you let them know of your very late arrival so they don't mark you as a no-show.
