I recommend Fishy, Fishy in Kinsale. I had a superb luncheon there.
Max’s in Kinsale was hands down the best meal of our 18 day visit to Ireland in May. It’s a very small fixed price menu, and they have an excellent selection of wines. The service was excellent, too. Check out their sample menu online, and if it sounds good to you, definitely reserve in advance!
If you’re in Kinsale on a market day, you can get an amazing selection of fresh fruit, all kinds of delicious salads (pasta, lentils, slaw, etc) and bread — almost everything you’d need for a picnic lunch. We did this, then did the walk to Charles Fort, and enjoyed our lunch there.
In Belfast we had good dinners at Ginger Bistro (for some reason noted $$$$ in Rick’s book, but less expensive than most places we ate) near downtown and also at Holohans in Queens Quarter. The food at the Market looked amazing there, as well, but we didn’t have the opportunity to try anything there.
In Galway, I’ve had excellent meals at IL Vicolo and Cava Bodega. The first is Italian, in an old mill with stone floors, and I enjoyed a fantastic Cacio e Pepe in a lovely setting. We originally booked a table because it smelled so good when we walked by one late morning. Cava is tapas and always terrific. Make a reservation at either - or both!
In Belfast, agree with Holohan's and the food at St George's Market- some other good ones: Deane's at Queens, Love Fish, Barking Dog, Molly's Yard, and Darcy's. Having lunch in a snug at the Crown (a National Trust listed pub) is also a very nice experience.

Out of the Blue in Dingle was terrific on our recent trip.
In Dingle, I had a fantastic meal at Out of the Blue. This was my best meal in Ireland. It is seafood only, the menu is listed on a blackboard, and you need to book in advance.

In Westport, we had a great dinner at the Olde Bridge Restaurant- really authentic Indian dishes. I would second IL vicolo in Galway. Had an unusual pasta dish and great Italian wine - dined on the covered patio bordering a canal that was lovely. We also had a great meal at Out of the Blue in Dingle - but know it is only seafood.
