I am flying from Florence to Dublin and it is hard to find flights at al - when they do exist they are typically on Vueling or maybe RyanAir, Are these airlines reliable? I am looking for flights about 3 months ahead of time - are there typicality more flights available closer to the travel date?

Vueling is part of IAG, which includes British Airways, Aer Lingus and Iberia, among others.
Ryanair could be considered the 'Southwest' of Europe.
No reason to expect more flights to appear on the schedule.
As budget focused airlines be sure to know and comply with the baggage rules lest you get a na$ty surprise at the gate.
As already stated, Ryanair will strictly enforce baggage weight and dimensions at the gate, so if your carry-on is oversized by a 1/4", you pay an excess fee (higher than the ticket, probably) to check the bag. Otherwise, they seem to run a pretty smooth operation. There's always a bit of chaos at the gate as people discover they can't stretch the rules.
Also, they tend to service routes that are exclusive to them, so you won't find alternatives. Luckily, they keep prices low.
They are both low cost airlines so follow their rules to the letter.
That being said, Florence has a rather small airport that is impacted by geographical problems. You will find more options if you look at flights to nearby Pisa.
