The wonderful city of Galway has B&B’s. You can take the bus or a taxi from there to the airport.
Oscar’s Seafood Bistro would be fantastic for dinner the night before your flight.

Any suggestions? The ones I contacted have 2 day minimums which won’t work.

If you look at booking.com there are plenty of 1 nighters- I have just looked for a random night this month and 79 properties came up.

In September 2018, we stayed at the Petra House B&B in Galway. Looking at their Website just now, they do accept 1-night stays, although it appears that several nights in September are already sold out. You’ll need to see if your date is open. We did stay for 2 nights this last time, but for even 1 night, it’s got a great location and a very nice place. Good breakfast there, too.
P.S. For that dinner at Oscar’s, make a reservation.
