Jeffery - Estimating travel times is dificult. Check out www.viamichelin.com. Our family used there directions as a base and then added 25%. It seemed to work ok.
I found the estimates from Google maps and Michelin to be pretty accurate. Adding 25% was a reasonable margin of safety. [Edit](Apparently Joel and I were typing the same thing at the same time...)
On the motorway sections radiating out from Dublin, you will generally be able to make good time. On those, driving around the limit of 120 km/h will be usually attainable.
Other roads, good luck. On the routes with 100 or 80 limits, the average will usually be much lower given other vehicles, road conditions and the route diving in and out of towns and villages.

as mentioned in many other posts, a good rule of thumb for Irish driving is to assume an average 50mph for drives on motorway-grade routes, but only 40mph on non-motorway routes. Once you are onto the minor roads (unclassified single carriageways), you will be lucky to make 30mph on average.
