We are leaving Dingle to head up to Cong for 1 night at Ashford Castle. Would like to break up the drive maybe staying in Ennis with a short stop to see Bunratty Castle. Would Ennis be the best stopping point overnight? Seems smaller than maybe Limerick. Suggestions please?

I recommend Ennis as a good place to stop and a good base for County Clare (although it sounds like you will just be passing through). The traditional music scene is pretty good there, try Cruise's Pub. My wife and I stayed at the Grey Gables B&B in both 2002 and 2016 and recommend it highly. You can easily walk to the downtown area from the B&B.
Thank you. Yes, just wanted to break up the drive so thought Ennis might be good. We will be staying in Galway for 3 days after 1 night at Ashford Castle.
Ennis makes a great stopover point. We have stayed at Grey Gables and Glenomra House and much preferred Glenomra. Mary was a hoot! It is a little bit more of a walk into town, though.
