We are scheduled to fly from the US into Shannon Sunday night into Monday morning.

Here’s a link to NOAA National Hurricane Center. the center's for cast only covers the next 48 hours. Judging by the map, there should be no effect on the Emerald Isle until Monday.
Monday is when we are expected to arrive :(

Biggie, I'd follow Met Eireann. They've issued a Red Warning, their highest, for the west of Ireland through the 17th. Presumably, that includes Shannon. The storm will alter as it approaches Ireland, losing its hurricane status. At that point, the National Hurricane Center may stop issuing bulletins on it. (Met Eireann red warning)
Here's the Shannon airport site. They might post a notice if they close.
Hurricane or not, the forecast calls for arrival in the west of Ireland on Monday morning, with sustained winds of 50 mph and gusts to 80 mph.
So, yes, you might not be flying into Shannon Monday morning. If your airline has a phone app that offers alerts on your flight status, set it up for that. Also get on Twitter and follow the airline. Trying asking them about your flight's status there. You'll be one of thousands with the same question but the airport and the airlines may wait as long as possible before closing and canceling/diverting flights.
