I’m planning a visit to Ireland and Scotland July 11 2018, leaving Tampa Fl arriving Cork. Plan to rent car and eventually catch the ferry to Scotland.
Want to stay 3 weeks. -no less than 2 weeks
I don’t want to reserve a round trip flight if I can help, because my length of stay is fluid.
How doable is a one way flight over , to Cork, and one way flight back from Scotland to Fla. /when I get a better idea of a return date? -just me and backpack.

First some basic stuff, most would do what is called an open jaw flight, in website talk it would be a multi-city option. You would just need to play with options. Maybe into Cork and out of Edinburgh or Glasgow would work, but I would also check into Dublin. Some combination of those would work. The advantage is in doing everything in one ticket is usually cheaper than one ways, the other option is to look at a ticket consolidators where they might be able to match different airlines in a single ticket.
As for the ferry and a car, taking a car from Ireland to Scotland will probably not work, rent a car in Ireland, return it, then once in Scotland, rent a second car.
Your best bet for flights would be from Orlando. Aer Lingus flies non-stop from MCO into Dublin.
You could catch a short connecting Aer Lingus f!ight to/from Edinburgh or book a round trip flight on the very inexpensive Ryanair.
Another popular and inexpensive airline from Orlando and Ft. Lauderdale is Norwegian Air Shuttle to London Gatwick and various European cities..
You say "length of stay is fluid." If you mean you don't want to book a flight back to the USA until you are already on the ground in the British Isles, be aware that this may cause a problem with immigration/passport control. Foreigners are only allowed to stay for a certain amount of time, and if you have nothing booked to show that you will be leaving by a certain date, you may not be allowed in.
