Next Christmas in Ireland with Teenagers

Our family would like to spend our money on a trip next year instead of gifts. Ireland is an easy jaunt for us from Boston. I'm looking into renting a cottage for the four of us on the Dingle peninsula but would love to find a nice hotel, manor, castle or restaurant where we can book dinner reservations for Christmas Eve, Christmas Day or St. Stephen's Day. Or all of the above.

Recommendations? There are four of us, it will be my two sons' first trip to Europe at 12 and 16. I love the idea of a castle, but so far they all seem a bit costly. We don't need five-star accommodations either!

Christmas in Ireland is a wonderful idea and the Dingle peninsula in particular, so nostalgic and lovely, lights and carols in the pubs, parties and great fun.
But on Christmas day there is virtually nothing open and nowhere to eat unless you cook for yourselves.
In terms of Castles, they do open, I stayed at Ashford castle last year, but you'll pay an absolute fortune and usually they don't welcome non residents, and if you choose to stay you'll pay a mind blowing amount of money. We paid almost €700 a room for our Christmas jaunt to Ashford, in retrospect Im not sure it was fully worth that. Though it was definitely enjoyable.
