Narrowing down itinerary to western Ireland need advice

We are planning a July 2019 trip with three kids 11,14,16. Based on fact we don’t want to rush around and would like couple nights in a few places plus no drive longer than 3 hours we realize we need to revise our original idea of Dublin and then over to west. We’ve decided to eliminate Dublin for this trip and fly in and out of Shannon. A must stop is Galway as I have family there, 2 nights staying at Glen Lo Abbey. We’d like advice if we want to stay west coast. Ideas we have are Dingle Pinsula ( kenmare park hotel), and Dromoland Castle. At Dromoland we see much to do so def feel two nights there. However Adare manor looks nice, if choosing between these which is better? Also any ideas how to break up the 3 hour drive from Shannon area to Dingle, any nice town to stop in between do 1 night? Thanks

I didn’t stay at Dromoland castle, but I was curious so I stopped in for a look around. Beautiful place, but just know that you would be expected to dress for dinner (waiters had on tuxes) and there was a harp player in dining room. It all had a very stuffy feel to me that did not appeal, but you may be different.
The 3 hour drive to Dingle is easy and short. We stopped in Adare for lunch. There is an abbey there.
