We will be traveling with a group of 35 family and friends in May from The Cliffs of Moher to Dingle. I’m looking for a place for our group to stop for lunch, any suggestions?

Never considered the meal problem for large groups. If you're all in a bus, I think I'd look at places in Limerick? If you're in a swarm of cars/vans, you could split up by interests, some stopping at Kilkee Cliffs and taking the Kilmer Ferry, eating in Listowel, other's going via Limerick and eating in Durty Nellies, some in Limerick. I would think that with six month notice, you could reserve a hall with a caterer? Maybe Bunratty Castle would do a special lunch event. They do a medieval dinner, so they are equipped for large rowdy groups. Call/email them and inquire - maybe they'll have other ideas.
