Long awaited trip to the motherland

Hi!
Tickets have been purchased. Thank you to all who gave me advice. Now, I have been working long and hard on how to plan the trip. I have family (my Dad's side) who live in Athlone who other members of my family have met, but I have not. Now, at 60, I will..
I will be traveling with my husband, son and my son's girlfriend.(they are in their 30's) ..my husband is not 30 though LOL.
So we will arrive in Dublin Sat 9/22 @ 5:30 am. My son will arrive late afternoon. My husband and I plan to browse around the city, maybe a sightseeing tour or the hop on & off. We would like to stay in Dublin thru Monday. Now it gets a bit complicated. My son can only stay thru next weekend and flies out the following Sunday. She is a Waterford collector so we would drive from Dublin to Waterford on Tuesday and then up to Galway. I would like to stop in Kilkenny to visit Smithwicks. My son is a beer/whiskey enthusiast. But I am not sure if that is doable. We would arrive in Galway Tuesday night and spend Weds and Thurs. there. I am a rider and would like to go on a short trek with Cooper Hills Livery in Galway. Then leave for Athlone on Friday. I have yet to speak to my Irish cousins so depending on their plans this may change. I would love to stop at the National Stud on the way to Athlone. Athlone will be family. Probably spend Friday night in Athlone and head back to Dublin Saturday.
My son leaves Sunday morning. My husband and I would like to take the train to Belfast and spend Sun. and Monday in Belfast and take the bus or train back to Dublin. I understand there is a bus from Belfast that goes directly to the airport.
This all seems so awful that we are zooming thru Ireland . But it is what it is.
I have no clue as to the reality of this itinerary. LOL. Help!!!
