Lesser known sites Cashel to Kinsale

I'm going over my notes and I had jotted down some attractions to possibly consider on our day leaving Kilkenny heading for Kinsale.

We will leave Kilkenny early and head to Rock of Cashel and eventually Kinsale. In my notes I have some off-the-radar attractions that I must have picked up somewhere. Does anyone have any opinions or knowledge of these: Hore Abbey, Athassel Priory, Celtic Plantarum in Dundrum, Holy Cross Abbey, Cahir Castle and Killenure Castle.
Any worthy of a brief stop?

Cahir Castle is, if I remember correctly, the most intact/preserved castle in Ireland. In addition to seeing Cahir you can walk a nice path to Swiss Cottage--well worth it and a pretty walk.

I would recommend Cahir Castle as a stop. Fully restored and and all areas are open to the public. Visited there in 2014. Well worth it. Leave yourself some time to explore the castle and surroundings. There is a nice park adjacent to the castle (great for a picnic lunch too). Another castle I highly recommend is Ferns Castle located in of all places...Ferns. It is located on the N11 road between Gorey and Enniscorthy in County Wexford. It is a small castle a bit off the beaten path so few if any tour busses. There is a visitor center, free admission and free guided tours of what is left of the castle (one complete tower remains). We spent the better part of 2 hours in the tower and grounds with the tour guide. Learned much more here about medieval times than with any other castle tour. Hope this helps!
