I'll be in the area for three nights. Just need a restaurant and a few pubs to keep me busy in the evenings. Are these three towns too small for a bit of nightlife? I know it's larger but I'd also consider Tralee (not Dingle or Killarney). If you've spent the night in any of these, what did you think?
We've traveled all over Ireland on multiple occasions and have come across only two tiny villages that had no pubs or restaurants at all. In all likelihood then you won't go hungry or thirsty in those three towns. But do a Google search anyway to see what you might find.

My first priority is, "where do you get the best pint of Guinness?" I try Falvey's Pub.
But an honest question of "who pours the best pint?' and remember they know you are an American visitor so they might direct you to a clean place. It is important to get the wording correct, pours the best pint. Then food can result in a faulty recommendation because of your visitor class. "Besides home, where do the locals eat?"
Killorglin has plenty on offer.

We based in Killorglin for a week to explore Kerry and Dingle. There are at least a couple of nice restaurants and several pubs. It's a small town but great location for exploring Ring of Kerry, Gap of Dunloe, Killarney National Park, and Dingle Peninsula. Coffey's River's Edge B&B came highly recommended by friends although we booked a cottage across the river.
