It's definitely doable, logistically speaking (assuming you'll have a car). Total round trip driving time is about 3 hours.
The question is: At what point will you burn out? I haven't seen Jerpoint Abbey or Kells Priory, but having seen lots of similar ruined abbeys in Ireland and elsewhere, they can start to look the same after a while. So plan accordingly.
Maybe plan on brief stops at the first two in the morning, stop for a quick lunch, and then a longer visit at the Rock of Cashel, where you'll have a guided tour. From there, it's possible to walk to Hore Abbey and back, but that will add time, so if you really want to do that, keep that in mind. Otherwise (or if it's raining), you could drive there. (Hore Abbey is visible from the Rock.)
Anyway, I'm thinking you'll need more time at the ROC and Hore Abbey than the other two. You might be tempted to spend hours at the first one or two stops, but then you'd be short of time for the rest.
I'd hate to suggest NOT seeing anything. I think if you just think about your interests, and budget your time, you'll have a great day out.
