We are trying to get from Kilkenny to Tralee on a Sunday to start walking the Dingle Peninsula, but are struggling to find buses or trains out of Kilkenny. I would appreciate suggestions.

Kilkenny is not on a train line, so your only option for public transportation is bus.
Look here for possibilities:
Sunday schedules might be more limited than weekdays.
Bus travel is slow, but I have to say that one of my best days in Ireland was spent on an all-day bus ride chatting and people watching.

I may be out of date since I've not been to Ireland for 3-plus years, but I've traveled between Dublin and Kilkenny several times by train. The center is maybe a 10 minute walk from the station. I just checked rome2rio.com and it shows a train route from Kilkenny to Tralee with 2 changes as the fastest, and the bus as the cheapest.
