We will be driving from Dublin to Kinsale with a late afternoon stop in Midleton (16:45 @ Jameson) this summer. Would 2 hours in both Kilkenny and Cashel be sufficient or would it be best to skip one of them? I don't think that we would be able to leave Dublin before 8:30/8:45 in the morning.

Not sure what specifically you were thinking of seeing in Kilkenny but 2 hours is sufficient for a Cashel stop. It's really beautiful and well worth the stop.
If in Kilkenny you are thinking of the castle.....it's cool but personally I prefer Cashel. Jerpoint Abbey I liked a lot so there are definitely really interesting things to see in Kilkenny but I'd prefer stopping at Cashel and enjoying the rest of the drive being more leisurely and feeling free to stop at "targets of opportunity" along the way.
