Is a full day enough or too much for staying in Kilkenny?

We spent two nights in Kilkenny, but really just one full day, which I think was the right amount of time. We arrived around 5:30 p.m., and were staying just outside of the town at the Lyrath Estate. Having had a very long day (left Dublin early, drove to Powerscourt, then Glendalough), we were content to explore the grounds and eat on the premises.

The next day, we drove into town and started at Kilkenny Castle, did the tour there, and walked around the grounds. Then we found lunch on High Street. Afterwards, we went to St. Canice's Cathedral, and climbed up the round tower (great views). Had it been open, we'd have done the Smithwick's Experience. Instead, we grabbed a pint at Kyteler's Inn. We ate an excellent dinner at Campagne, a Michelin-starred restaurant (which has a pre-fixe "early" bird menu that is an exceptional value). The next morning, we headed out for the Rock of Cashel and onto Dingle.
