Itinerary--too ambitious?

We are travelling to Ireland end of April and departing May 7th. Part of our trip entails attending a wedding in Waterford. Our current plan is to depart from Waterford on Tuesday. Then:
Tuesday: Drive to Cork and stay one night
Wednesday: Drive to Dingle and stay one night
Thursday: Drive to Galway to visit Cliffs of Moher and the city. Stay two nights.
Saturday: Drive to Dublin and stay three nights, departing Dublin on Tuesday

Our other option was driving from Waterford to Dingle (Dingle one night), two nights in Galway, and four nights in Dublin. We are trying to balance avoiding long drives, seeing what we want, and not exhausting ourselves and seven year old. Thoughts?

The one-night stays I think make both of these options unsatisfactory.

My suggestion is two nights in Dingle, two nights in Galway, and three nights in Dublin. If you get an early start on Tuesday, you can stop and see some of the things that interest you around Cork on the way to Dingle. Make it a leisurely drive with a late-ish arrival.

We only had 4 nights... We did 1 night Dublin, 1 night Waterford, 1 night Killarney and 1 night Galway. We had an amazing time, relaxed and just socked it all up. I would take away time from Dublin to spend elsewhere but that is just me.

Personally I would avoid one-night stays and cut down the amount of time in Dublin. But more important, can you get advice from your friends/relatives in Waterford who are organizing the wedding? Are there others visiting from the USA, and might you want to coordinate your plans with them? Or, if they've traveled in Ireland before, might they appreciate your asking for their impressions and recommendations?

In my opinion, Dublin is an okay city, especially when compared to the rest of Ireland. I would cut Dublin to 2 days and add a day to Dingle. Take a day in Dingle to drive the Slea Head Drive around the peninsula. It is one of those experiences you will never forget.

One thin to keep in mind is that driving in Ireland takes much longer than you would expect. The roads do not allow fo you to go very fast and every so often you will want to stop to see the beauty around you.

I agree with the others on limiting your one-night stops. I would definitely add an additional night in Dingle, which was a highlight of our Ireland trip last May. We stayed in Dingle 2 nights and we absolutely loved the town, and we loved having that middle day to leisurely explore the Slea Head Drive. We also learned the truth about what others had told us before our trip - drive times in Ireland take longer than what Google Maps would have you believe. Once you're off the large motorways the roads are very narrow and require some cautious driving. You might consider removing the night in Cork, or removing a night from Dublin.
