Itinerary Help - Family History + 4 days

I am planning on a trip to Ireland in late July/early August (I know it's late, but I think I can still do it). I will be traveling with my husband and 2-3 young adult children (23, 21, 16). I have spent a lot of time tracing my family tree and want to visit the places that my ancestors came from, specifically, Co. Longford (north and south), Carrigacunna, Cork (northern Co. Cork), and Cashel, Tipperary. We also would like to see some other parts of Ireland.

Here is my itinerary - please let me know if it sounds reasonable and if you have any suggestions instead of Cork/Kinsale and the Dingle Peninsula. My husband is a foodie, so I added in Cork and Kinsale. He would probably like to cut out a day or two, but I don't know where I would do that.

Dublin - 2 days (coming from California, so some jet lag)
Longford - 2 days (maybe 1 day)
Cashel, Tipperary - 1 day
Carrigacunna, Cork - 1 day
Cork City/Kinsale - 2 days (could switch this for something else)
Dingle Peninsula - 2 days (could switch this for something else)
Dublin - 1 day

I just wrapped up planning a trip for early June with my husband and a 3 year old, so don't feel bad! This is my first time going and as a long time avid amateur genealogical researcher, I will be landing in Dublin and spending an hour the next day getting guidance at EPIC from a pro genealogist to get a few more specifics if I can. (Sure, I could ride through Newmarket, but with this record, can I tell which church the 4th great grandparents married at and if it's still there? Or see the land where they lived?) I toss that out there because I think it will be 85 Euro (for an hour) plus another hour of two of my time that will be well spent in making the family part of the trip meaningful. But onto your question...

We are also going to both Dingle and Kinsale. I am planning one day for each. I know 3 different groups of friends who have visited those places. One was a couple on honeymoon who would have lived in Kinsale forever if they could have because they are such foodies. If you are trying for a super laid back vacation, parking on Dingle for 2 days would be fine but you could drive the ring and enjoy it well enough in one. My husband enjoys learning about military and naval history so Kinsale will be good for a walking tour and a few good meals before we move on to Cobh, since several of our ancestors sailed to the US from there and it is just up the road from Kinsale... on our drive back to Dublin, really.
