Looks good and you have put a lot of thought into it.

Day 5 - Rock of Cashel is the long way round from Dublin to Kilkenny, but needs to be done then as it doesn't fit in elsewhere.

Day 5 could be over ambitious. The drive from Kilkenny to HJerpoint Abbey, waterford Crystal to Cobh is going to take a good 3 + hours (longer if you make unscheduled stops for the view) and allowing time to park etc. That may not give a lot of time to see those places, especially as you need to be at the Titanic experience by 4.30 . You will need to keep an eye on the time during the day.

My understanding is that there are a lot of Beltane events and dance/cultural festivals in May throughout the Republic of Ireland and Northern Ireland. If that strikes your fancy, just google "may 2024 ireland festivals" and enjoy!

Great advice. I will scale down day 7 for sure and will also check out the site for the events in May. Thank you both.
