We are flying in and out of Dublin.
Spending the first 2 nights in Dublin.
Then renting a car.
Should we rent the car in the city or go back to the airport to get the car?
We want to go to Waterford, then west coast.
Any suggestion on what to see
And where to stay,
ROK and Dingle or will this be too far, before heading back to Dublin to fly out.

Unless you have driven on the left before and in a manual transmisson, I would go back to the airport to collect the car. You don’t need the car in Dublin.
For your next question, how long do you have in Ireland? If just a few days, I would not try to do Dingle and ROK.
I would definitely pick the car up at the airport on your way out. No need for a car in Dublin.

We have 6 days in Ireland
Would like to see the cliffs and scenery,
Not to touristy
Then I would head to the ROK and plan to base yourself for all the remaining days you have there, though it will be a long drive from Dublin. Perhaps a town like Kenmare. You could do the ROK and see the Cliffs of Kerry. Whatever you do, do not try to see everything in your short time frame.
