I am looking at staying in Ireland beyond the guided tour. Can anyone suggest the best place to stay for 4-5 days? I want to soak up the culture, food etc.

Not knowing anything about what you will have already seen, if I was going to add days in Ireland, I would spend them in Dingle and/or Dublin. They are both good places to "soak up the culture". The Dingle Peninsula is one of the areas of concentrated native Irish speakers.

Another option would be to base yourself in Galway in order to explore the Aran Islands and Connemara - two beautiful but often overlooked places in Ireland, and likely not covered much (if at all) on your tour. Wouldn't need a car for that, although renting one fora day or two would allow you to better explore Connemara at your leisure.
There are express buses to Galway from Dublin ... both from the city center and the airport.
