Ireland 5 day Iten help. - end of June

Hello

We are going to Ireland for 5 days, landing on a Wednesday at 11 am from Chicago and then flying back on Monday at 1 pm. So we have 5 full days, I have been reading and I am completely confused what to do - so please need help?

1) Shall we do Dublin, Galway and Cliffs of Moh. (or)
2) Dublin and Dingle Peninsula (or)
3) Dublin and something else?

I will say I don't want to spend every night checking in and out of hotels and would preferably like to just stay in two places, max three. Please please help.

Maybe I'm missing something but I only count 4 full days (Thursday, Friday, Saturday and Sunday). Are you traveling back to the US on Monday? If so, be aware that you pre-clear US immigration in Dublin which means you need to be at the airport by 10:00 AM. With that in mind, upon arrival in Dublin I would take the bus to Galway and spend the first 3 nights there. You could take day tours to the Cliffs of Moher and the Aran Islands on Thursday and Friday. On Saturday I would take the train back to Dublin and spend the last two nights in Dublin. If Dublin itself doesn't interest you, consider day tours from Dublin to Newgrange, Glendalough or Kilkenny.

Trotter's suggestion is a good one for making the best use of your limited time.
There's an express bus from Dublin airport to Galway that makes it pretty easy to get there after you land, and a few nights there would allow you to explore some of Connemara and visit the Aran islands, neither of which would require a car - an important consideration these days when the cost to rent one is upwards of USD $200 per day.
Alternatively you could just base yourselves in Dublin, explore the city, and then book day trips to the Boyne Valley and Newgrange to the north or to Glendalough and the Wicklow mountains to the south. That one will include the estate at Powerscourt whose gardens should be in full bloom at the end of June.
If you're a little more adventurous or just want to strike out on your own, you can visit Kilkenny by train from Dublin (about 1.5 hrs) or maybe spend a day up in Belfast - a fascinating and beautiful city about 2 hrs from Dublin by train or bus.

Yes four full days, we land in Dublin at 11 am on Wednesday. We are ok with the price of the car rentals and wanted to drive around and explore so I was wondering if we should just spend Wednesday in Dublin. Rent a car on Thursday and spend Thursday, Friday and Saturday exploring the Dingle area? And then drive back to Dublin by Saturday night so we get some night life and the day Sunday?

It's a 5+ hour drive from Dublin to Dingle - probably not the best use of your limited time.
If your hearts are set on trying to see Dingle and at least part of the Ring of Kerry then you might want to consider flying from Dublin Airport to Kerry (KIR) on Ryan Air which has a couple of direct flights per day connecting the 2 airports. Cost is less than USD $50 per person which will be a bargain even after you account for the costs of their incidentals.
There are several rental car concessions at the Kerry airport, from which it's about an hour over to Dingle. Finding a rental car with automatic transmission might be a challenge, and is likely to be quite expensive, but might be your best bet.

aah if it doesn't make sense time wise they forget it we will stick to Galway and day trips from there.

One more option to consider if you took the bus to Galway. Rent a car there on Thursday, do the Cliffs of Moher, explore Connemara and maybe even a part of the Dingle Peninsula before driving back to Dublin and returning the car there.
