We'll be driving from Dublin to Doolin, taking the M6 route. We aren't opposed to taking a more scenic drive, however, so I'm wondering what there might be to see on our way west.

I’ve never been but you will pass through Athlone along the M6: https://en.wikivoyage.org/wiki/Athlone.
It wouldn’t be much of a detour to Clonmacnoise.

Definitely Clonmacnoise with its ruined chapels, round towers and carved crosses. It is a magical place.
Athenry is also a nice small medieval town with its ruined castle, remains of the town walls and ruined priory. It also has an interesting heritage centre.
