Horseback Tours

EDIT: I worded the original post poorly...

What are the recommendations for people/groups/farms located in counties starting from Dublin counterclockwise towards Galway through the countryside?

That's our travel direction and I want to get my dad on horseback for a few hours somewhere along the way.

My go-to ride company for information is https://www.equitours.com/europe/ireland/ Many, many years ago friends and I did a 6-day ride in Donegal. I doubt if any company will have a ride from Dublin to Galway. Instead, are you thinking of a road tour that stops along the way so you can ride for an hour or two?
You might find a list of rides doing a Google search; but just a brief look-see, most are hourly rides, not point-to-point.
Hint: be sure to take a sheepskin seatsaver. The saddles are older, hard all-purpose ones.

My bad back and joints would put me in a beginner category although I owned horses and rode dressage for years.

If you are traveling back to Dublin from Galway, Birr is about halfway between.
Birr Equestrian Center does 1-2 hour treks from Kinnitty Castle through the Slieve Bloom Mountains.
We had a very windy, rainy day with Noel leading us through the mountains, but it was a great experience! He can adjust the ride to the level of the riders.

Something to also keep in mind. All trail rides in Ireland use English saddles; I have not found any that use a Western saddle.
