Help with itinerary 11 nights leaving April 20

hello All,
I could use some help with our itinerary. Been to Ireland several times, always flown into Shannon, this time flying into and out of Dublin. Although we will not spend too much time in Dublin, maybe 1 or 2 nights in the beginning or end of trip, just cannot decide how to start our trip, to go straight across to Galway area or go South along the coastline making our way up to Connemara area. Places along the way a must Wexford, Cobh, New Ross, Dingle (maybe two to three nights here) we love this area, on up from there to Doolin, Galway, Westport, Clifden, and Connemara. What I cannot decide is where to make a base from on the west coast. Would Doolin or Galway be a good spot to head north or too much driving? I haven't been any further north than Galway, but love Doolin too. Our plan is to go north as far as Connemara.
Would love to see some lambing farms a working sheep farm to see border collie working, maybe some lite hiking and shopping.

Any help or suggestions of B&B's along the way.

Killary Sheep Farm is in Connemara between Clifden and Westport. We loved our morning there, complete with dogs and sheep shearing. Even got to hold and feed an orphan lamb.

On the west coast of County Clare we spent a few nights in Lahinch at Craglea Lodge B&B. Wonderful place, search for it on AirBnB.

Oh thank you for the info Katheryne, did you make an appointment to see the lambing and sheep?

There are regularly scheduled demo times at Killary Farm, and you need to book ahead online. Then just show up. We took the Sky Road drive out of Clifden on the way to our 11:00 tour. Saw the lambs and barns first, the the sheep dog herding demo, then sheep shearing, then fed the lambs. Took about 1 1/2 hours as I recall.
