I noticed that I have made an error in my plans for my upcoming trip to Dingle on Monday May 7th for 2 nights. This is after the bank holiday weekend and a lot of places are full or just outrageously expensive. Can anyone recommend a B&B that can accommodate
5 . 3 in one room 2 in another.
I'm in a panic now and need your help

I don't know your actual mix of adults and kids, but Booking.com is showing a few options available on May 7, at least for that one night:
We stay at the Garvey Farm house in Ventry just outside Dingle and would highly recommend. Not sure if they have room but worth looking into

When we really got stuck finding a room in ireland we found that it was really helpful to call a B&B in our price range and ask for recommendations. That's how we found rooms in 2 towns that were having festivals. We used Skype to call very inexpensively.
http://brownesdingle.com/ we enjoyed this spot, pretty roomy, it is under a mile from the harbor area...can be walked but is a short drive to the harbor and parking. Camilla is great!
Try the Kirrary B&B also. It's right in the middle of Dingle Town, though I don't remember how many people a bedroom can accommodate. http://collinskirrary.com/
We stayed two nights at the Lighthouse B&B in Dingle and recommend it highly; we were 3 and 2 also
Not only a 3 day weekend, but there is a dance festival this weekend and it's Star Wars Day, too (May the 4th be with you!). It's gonna be a mob scene!
Don't miss out on Annauscaul as an option, too...... it's on Dingle peninsula, but not as crazy busy as Dingle town.
If I were you, I'd call the Dingle tourist office at the Blasket Island tourist office and ask for recommendations. And join AirBnB to see if you can rent a house. They would be called HOLIDAY HOME in ireland, not vacation house.....
