I like to get my haircut when travelling, just for a change of pace. I am wondering if anyone can recommend a good hair stylist in Dublin, preferably in central Dublin as we will be using public transportation. Thanks for any advice you can give me.
Though I cannot direct you to a specific shop, you are bound to find a stylist in the Temple Bar area. It's in central Dublin. Temple Bar is an area of mostly art organizations, eateries, clubs and bars.
About 30 years ago, the city had planned to demolish Temple Bar because it was so derelict with plans to put a transportation center there. Dublin acquired the area and issued short-term leases to make some money. Artists moved in. Voila! The neighborhood suddenly became vibrant and appealing and remains so to this day. Dublin eventually nixed the transportation center and kept Temple Bar.

Here's one more suggestion: Have a meal at Gallagher's Boxty House in Temple Bar.
Boxty is an Irish taco. In the olden days, Irish people would split open a potato and stuff it with greens, meats and so on. Today, of course, boxty is much more gourmet than it was in the nineteenth century.
Gallagher's was there in 2010 when I was last in Ireland. If it's gone, there are dozens of eateries in the Temple Bar.
