Flying from Chicago to Barcelona Spain on Aer Lingus and have a short 1.5 hour layover in Dublin airport. Arriving at like 7am Dublin time. Is there any restaurants/bars open that early or possibly even as early as 5am to get breakfast/beer (hey I'm in Ireland and on vacation so cut me some slack on morning Beer comments)? Also will I clear customs in Ireland switching planes in Dublin but staying on Aer Lingus for entire trip, or will I actually clear customs in Barcelona Spain (don't know how this works as both countries are in the EU).
Do you know which terminal you'll be in? Here's a list of the restaurants in the airport area with hours and where they are in relationship to arrivals, departures etc.

I'll assume you weren't asking if you had enough time to leave the airport because that would be non-starter so these are your choices. It looks like a number of places are open early and even some offering "traditional bar food" which certainly sounds like you might be able to talk then into breaking out a breakfast beer for you.
As for customs it seems country related. We had to clear customs in London from the US, into Ireland from England but not coming back into England from Ireland.
