Gluten Free pubs & restaurants?

We'll be traveling to Ireland in October. I am non Celiac Gluten Sensitive, so I need to avoid flour, breadcrumbs, soy sauce, beer ( I know) barley and millet. How difficult will it be for me to find restaurants/pubs that have a handle on how to prepare gf food and avoid cross contamination? We'll be flying into Dublin, heading south to Waterford, the Ring of Kerry, the Dingle Peninsula, Kinsale,Killarney, Cork, Limerick, and Galway.

Any recommendations for pubs or restaurants that any gf traveler has enjoyed? Thanks.

I am gluten intolerant, and my husband and I visited Ireland last in 2019. Ireland is the easiest country that I have traveled to for accommodating my food intolerances. I have 3!. This is due to the fact that many pubs, restaurants, and cafes, have the top food allergens listed for each menu item. They give each allergen a number. For example, cereal grains (gluten) is #2, dairy is #7, etc.--I can't remember the exact numbers. Then following each menu item, there will be a 2 if it contains gluten, 7 if it has dairy, and so on. As I said, Ireland was easier for me than all the other countries we have visited. Take the same precautions as you take in the US--clearly communicating with the server, asking lots of questions, letting them know that you will have a reaction, and you will be OK! It is an EU wide law that all establishments serving food and drink to the public have to list all allergens on the products they sell so by looking at any menu in a pub, restaurant etc you'll see what dishes contain gluten. All staff involved in food preparation will have undergone food hygiene and safety training which includes subjects such as allergies and cross contamination.

My wife is intolerant to gluten and we've found that eating in Europe is far easier from an allergy perspective than it is elsewhere.
