Gatwick Airport transfer time--from easyJet arrival flight to RyanAir departure flight (to Dublin)

We are flying from Inverness to London on easyJet, arriving at Gatwick at 8:45 am. From there we want to transfer to a flight from London (Gatwick) to Dublin, and we are trying to decide how much time to allot for this transition. We are not checking any bags. Again, we'll be flying in on an easJet flight from Inverness and transferring to a Ryanair flight to Dublin. We notice easyJet flies into the South terminal and Ryan Air flies out of the North Terminal. Apparently this is just a 5 minute transit between terminals, but since these are two different airlines and two different terminals, do we have to basically start from scratch in the check-in and security process? Or, since we won't have any checked bags, can we just transfer to the different terminal without going through security again? Before we purchase the tickets we need to know how much time to reasonably allow to transfer flights? One option allows 50 minutes. The other option is about 3 hours. It's obvious which option we'd prefer, if its realistic.

Neither EasyJet nor Ryanair offer any connections, it is pure "point-to-point", not even for their own flights, definitely not to the competition.
And Ryanair have the reputation of being the meanest B--ta-ds in the business for sticking to their own rules and time limits, to the second. If you miss their time limit for getting to the gate, you have no comeback.
Yes, you will have to exit Easyjet arrivals, and go back "from scratch in the check-in and security process". Except, with Ryanair you must do your check-in online, and have your boarding pass printed out and in your hot sweaty hand before arriving at the airport, so just go straight to security with your check-in printout and passport (as ID) in your hands (this is also the best way for EasyJet).
The Good news: coming from Inverness, no immigration or customs, so just walk off the airport into arrivals.

CONCLUSION: 50 minutes no way. Allow 20+ minutes for disembark plus exit arrivals, plus security, plus Ryanair's limit for being at the gate. Plus risk of 1st flight being late. 3 hours still carries a risk.

Are you sure Easyjet flies into the South Terminal? All Easyjet flights I have been on into Gatwick were into the North Terminal? It is only 5 minutes on the shuttle thingy, once you have walked to the shuttle stop (5-10 minutes)

Not matter what consider 50 minutes as not enough because you do not know if the flight from iverness is going to arrive on time
go for the 3 hour layover and as usual if possible checkin online the night before and print boarding passes

3 hours will be tight. If you miss it you will be hunting for an available flight, at full price.
