For such a short trip, I would choose either Ring of Kerry or Dingle peninsula, not both. A series of one-night stays will really wear you out. You want to experience Ireland, not the interior of a car.

For recommendations on where to stay, consult a good guidebook like RS Ireland.

Do I understand correctly that these are almost all one night stays? That seems like too much, too fast. Have you already booked the flight, it's worth looking into open jaw into Shannon and out of Dublin, or the other way around. Or why use Dublin airport at all, since you will pay that city only a very cursory jet lagged visit. A good place to stay nears the Cliffs of Moher is Ennis. On such a short trip you might pick Ring of Kerry or Dingle but perhaps not both. My wife and I found the music in Ennis to be more traditional and authentic than Dingle, during our 2016 trip. But we might have just not visited the right places in Dingle. Cruise's Pub in Ennis is good for traditional music, found this to be the case on our 2002 trip and again in 2016.

Which would you eliminate to reduce from three to two?

Cliffs of Moher
Dingle Peninsula
ROK

Definately agree with the others that you are trying to do too much. I would cut out the ROK since that really needs several days to fully appreciate and do right.

Actually, the outlier here is the Cliffs. By finding a single, centrally located place to stay (vicinity of Glenbeigh or Castlemaine) you could unpack once and settle in for a few days while you explore both the Dingle peninsula and the Ring of Kerry. The Skellig Ring on the western side of the Ring is highly recommended by many of us, and the Kerry Cliffs provide spectacular views of the rugged coastline without the crowds you'd experience up at Moher.
As everyone else has opined, you should really slow it down and explore at a more leisurely pace. Ireland isn't going anywhere - it'll still be there when you return on a future trip.

We left Dublin around 11 am, stopped in Athlone, the Burren and still got to see the Cliffs of Moher well before sundown earlier this month. Late afternoon seems to be a great time to see the Cliffs, with the sun hitting them.

The next day we drove down to Kenmare, so we did the first part of the Ring of Kerry including Ross Castle and Muckross House. Dingle loop is closer than that so I think you could stick to the original plan if those cliffs are a must see.

Joy here is a great spot to stay in Doolin http://www.dalys-doolin.com/ Susan also provided us with maps and suggestions for a couple of driving tours we did in the area, she's great and the most helpful B&B host we had the pleasure of meeting. We also visited the Doolin Music House and it really enjoyed the trad music and the story telling. We were finished there early enough to then visit the pubs in Doolin for dinner and craic! https://www.doolinmusichouse.com/ I didn't see you had decided to skip the cliffs of moher/doolin. We did Doolin, Dingle (Slea Head drive and wonderful music and pubs), and Kenmare for the RofK and the Beara Peninsula. http://ashfieldkenmare.com/ in Kenmare, great spot, and http://brownesdingle.com/ in Dingle. Loved it all!
