Final itinerary for Oct. just need help with last day

After months of planning I think I have our trip pretty well planned. We are flying in and out of Dublin as I got round trip airfare for two people for less than $900 total. It was too good to pass up!
So our last day is gonna be rough but we will have to make do so any suggestions are appreciated. I also just want to say thank you to this group and the RS guide book for helping me! I'm soooo excited!!!!!

Day 1: arrive in Dublin at 8:50 a.m. Get rental car at airport.
Drive to Powerscourt House and Gardens. Spend late morning early afternoon here then check into Powerscourt Resort for lodging. Get cleaned up and drive to Glendough for early evening. Or if too tired stay in and do this in the morning.

Day 2 Drive to Kilkenny area and visit town and some local attractions
Stay at Lawcus Farm guest house

Day 3 stay at Lawcus Farm guest house. Explore Kells priory and Jerpoint Abby.

Day 4 Drive to Killarney and do jaunty tour of National Park. Check into Lake Hotel for lodging.

Day 5 drive to Dingle. Check in to Castlewood house for lodging. Explore dingle town!

Day 6: longs horseback riding two hour trek mountain and beach ride. Stay at Castlewood again. Possibly do slea head loop drive.

Day 7
This is where we need help. We have to head back towards Dublin as we have a late morning flight the following day.

Day 8 fly home.

I'm not overbooking activities daily. I want to pick one or two and build around those of we have time. I have a mobility issue with one leg so we can't do hiking extremes etc.

Thank you for your help.

You've got a long drive on Day 7 from Dingle to Dublin -- and I would recommend staying in Dublin, if not right near the airport, so as to eliminate stress in the morning in case of any traffic delays getting to the airport.

If looking for one point of interest to see on Day 7 that's not too far out of your way, how about Bunratty Castle? It would involve backtracking just a few miles to take the M7 northeastward to Dublin. Another choice could be the Irish National Stud since you're interested in horses -- it is just south of Kildare, along the M7. But you'd need to get an early start from Dingle to arrive there in time to enjoy.

Irish National Stud is a great suggestion! Really fun to visit and great tour.

If you don't think you'll get to the Stud early enough, you could do the Rock of Cashel on the way to Dublin.

Hopefully you can make it into Dublin in the evening.

I like both bunratty folk park and national stud. My favorite thing at the stud are the recreated beehive huts w an amazing waterford Crystal display inside

These are some great suggestions! Thank you! I know it will be a long day but for the deal on airfare we are willing to make it work!
